Ok, so I bought new batteries yesterday as I was 100% sure it was the problem - the classic turn the key, single click and nothing. Of course, new batteries in after removing all sorts of brackets and it's exactly the same.
So on turning the key you can very clearly hear a single, consistent, loud click from the under the car. I have checked I have good voltage to the jumper points in the engine bay (12.4), and reasonable voltage (11.7?) from + jumper point to engine manifold (to rule out any ground strap issues). From this can I assume the problem is definitely the starter motor? If it was starter relay or ignition switch I wouldn't get the click right? The click is the solenoid? I've never had to deal with a starter before.
